Adelaida Vineyards & Winery traces its roots to 1971, when Don and Elizabeth Van Steenwyk purchased Hilltop Ranch in the mountains west of Paso Robles as a family retreat, later building it into an estate winery named for the historic 19th-century mining settlement of Adelaida. The property sits at up to 2,000 feet of elevation in the Adelaida District, just 14 miles from the Pacific, where ancient calcareous soils and nearly 50-degree diurnal swings define the terroir. Adelaida's HMR Estate Vineyard traces to some of the very first Pinot Noir and Cabernet Sauvignon vines planted in Paso Robles by Dr. Stanley Hoffman in the 1960s, guided by legendary consultant André Tchelistcheff. Now marking over 40 years of winemaking, Adelaida farms its estate vineyards organically under winemaker Jeremy Weintraub, producing Rhône, Bordeaux, and Burgundian-style wines including its acclaimed Cabernet Sauvignon and Chardonnay bottlings from the historic HMR vineyard.
