Bovino Vineyards is a boutique winery in Templeton, California, founded by longtime wine grape grower and dairy farmer Dan Souza, whose name blends bovino (bovine) for his family's dairy roots and vino for his vines. The 83.5-acre estate sits in the El Pomar District of the Paso Robles AVA, with 45 acres planted across 16 grape varietals, from Cabernet Sauvignon, Syrah, and Sauvignon Blanc to lesser-seen selections like Arneis and Graciano. The architecturally distinctive tasting room and observation deck, designed by local architect Garth Kornreich, were positioned to capture sweeping sunset views over the vineyard each evening. Bovino Vineyards produces wine under three labels: its flagship Bovino line, Joludi, named in tribute to Dan's parents Joe and Ludrie and their dairy and farming legacy dating to 1949, and gen.er.os.i.ty. Visitors can choose from a range of tasting experiences, including vineyard tours by 4-wheel drive and barrel-cave sampling of wines not yet released.
